You should roast the chili first before you freeze it. They do sell both the Big Jim's and Joe Parkers in HatchI had friends that froze the chilies after roasting and cleaning. Can you do the same before roasting? They might not keep as long like that.
The chilies coming out of the Hatch area really good if you like something that has more kick than an Anaheim and slightly less than a jalapeño.

Hey dude if you want, you can roast them in my rig....I have used my smoker as a chili roaster and done 70 pounds at once......makes it fast....hahaha I might have to wear those sissy gloves. My hands burned for days after I peeled the chili last year. Thanks for reminding me to buy some gloves.

Thanks man, its not the roasting thats the hard part its the peeling 2 sacks of chili in one night that is killer. It is the chili "juice" that burns.
